In a city that transforms everything it touches into gold, Dubai’s latest obsession isn't another record-breaking skyscraper or floating palace - it’s chocolate. But not just any chocolate. 

From artisanal shops in Dubai International Financial Centre (DIFC) to specialty cafes in Jumeirah (and beyond!), Dubai chocolate is taking over the world.

As Dubai continues to position itself as a global hub for luxury, could this elevated approach to chocolate be the sweet spot between indulgence and mindful living? Is this indulgence actually any good for you?

Well, I’m a strong believer in everything in moderation - and a sweet treat every now and then.

I recently tried this Dubai chocolate, and I have nothing bad to say about it. In fact, I’m already thinking of the next person I can gift this to.

So, what is Dubai chocolate?

How can it contribute to mental health?

Dubai Chocolate: The Treat You Didn’t Know You Needed

Chocolate isn’t exactly the first thing that comes to mind when we think of “healthy” or “mental wellness.”

But sometimes, chocolate is exactly what we need. A recent study even showed that having dark chocolate a couple of times a week can reduce your risk of diabetes.

Inevitably, you shouldn’t pin all your hopes on better physical or mental health on chocolate - but a little bit every day actually isn’t that bad for you!

So, how can you make this yummy treat at home? It’s actually quite simple.

 

 

Can Dubai Chocolate Elevate Your Mental Health?

Okay, so maybe it’s not the healthiest recipe. But it’s got some good stuff in it. In other words, it’s not all bad. So, let’s dig in.

 

A Bit of Dark Chocolate a Day to Keep the Doctor Away?

Beyond its rich, complex flavor profile, dark chocolate (specifically over milk chocolate) is a powerhouse of mood-enhancing compounds. Its high concentration of flavonoids and theobromine works to boost endorphin production in the brain, creating that characteristic feeling of happiness and contentment. 

Specifically, selecting varieties with 70% or higher cocoa content ensures maximum therapeutic benefit while maintaining a perfectly balanced taste.

Research suggests that these compounds may also improve blood flow to the brain, potentially enhancing cognitive function and mental clarity.

Pistachio Paste for Filling

Tahini: The Ancient Wellness Elixir?

Completing this trinity of wellness is tahini, a paste made from ground sesame seeds that has been a staple of Middle Eastern cuisine for millennia.

This creamy addition brings more than just its distinctive nutty flavor - it's rich in tryptophan, an essential amino acid that serves as a precursor to serotonin production. 

Tahini’s high concentration of healthy fats and proteins works synergistically with dark chocolate to slow sugar absorption, preventing the mood swings often associated with sweet treats.

Additionally, its rich mineral content, including magnesium and zinc, supports overall brain health and cognitive function, making it a perfect complement to the other mood-enhancing ingredients.

Ingredients:
  • 150 grams of kataifi pastry (chopped and separated)
  • 60 grams of butter
  • 360 grams of pistachio paste
  • 20 grams tahini
  • A big pinch of salt
  • 500 grams of dark or milk chocolate
Instructions:
  1. Heat your large, high-sided frying pan over medium heat. If using a smaller pan, work in two batches, dividing butter and kataifi equally.
  2. Gently melt the butter, swirling to coat the pan surface evenly.
  3. Gradually add the kataifi pastry, carefully breaking it apart with your fingers as you go.
  4. Toast for approximately 10-12 minutes, stirring frequently with a wooden spoon or silicone spatula. Watch for a uniform golden-brown color.
  5. Once toasted, transfer to a paper towel-lined plate to absorb excess butter.
  6. In a spacious mixing bowl, combine the pistachio paste and tahini.
  7. Add salt gradually, tasting as you go to achieve the desired seasoning.
  8. Fold in the cooled toasted kataifi in small batches. Mix thoroughly but gently to maintain the pastry's delicate structure. Then, let the mixture rest for 5 minutes to allow flavors to meld.
  9. Place molds on a stable, level baking sheet, and temper your chosen chocolate (dark or milk) using a double boiler or microwave.
  10. Pour chocolate into molds, ensuring even coverage. Tap molds gently to remove air bubbles. Invert molds over parchment paper to drain excess.
  11. Use a bench scraper to clean edges, and chill for 15-20 minutes until completely set.
  12. Remove molds from the refrigerator, then spoon the kataifi mixture into shells, pressing gently to fill corners. Level the surface with an offset spatula.
  13. Warm the remaining chocolate if needed for proper consistency, and pour the chocolate over the filling, ensuring complete coverage. Tap gently to settle the chocolate and remove air pockets, and clean the edges immediately with a scraper.
  14. Refrigerate for at least 1 hour until completely set, then unmold carefully by inverting onto a clean surface.
  15. Allow it to come to room temperature for 10-15 minutes before serving, and store any leftovers in an airtight container in a cool place.
