  • Hot sauce
  • Pinch of salt
  • ⅓ cup of black beans (rinsed and drained)
  • 2 teaspoons of butter
  • 1 tablespoon of green onion (chopped)
  • 1 tablespoon of cilantro (chopped)
  • 1 tablespoon of pickled jalapeno
  • 1 medium whole-grain tortilla
  • ½ cup of cheddar cheese (grated)
  • Salsa (for serving)
Instructions:
  1. Whisk the eggs with hot sauce and salt in a bowl, then add the beans. Set aside.
  2. Melt the butter in a medium skillet.
  3. Once butter is bubbly, add egg mixture.
  4. Stir often for about one to three minutes, until the egg is set.
  5. Transfer the eggs to a bowl to pause the cooking process. Add the green onion, cilantro, and jalapeno to the mixture.
  6. In another skillet, warm the tortilla over medium heat.
  7. Once warm, add the cheddar cheese then the eggs on top to half of the tortilla.
  8. Fold the uncovered other half of the tortilla over the other portion. Continue cooking until at a desired crispiness.
  9. Serve with salsa or other sauces, and enjoy!
