Tuna and Avocado Sushi

Ingredients:
  • 1 1/2 (300 grams) cups of Sushi Rice
  • 2 tablespoons of rice wine vinegar
  • 1 1/2 teaspoons of caster sugar
  • 1/4 teaspoon of salt
  • 185 grams of canned tuna
  • 3–4 teaspoons of mayonnaise
  • The juice of 1/2 lemon
  • Pepper (to taste)
  • 1/2 of an avocado (sliced lengthwise)
  • 150 grams of cucumbers (de-seeded and cut into sticks)
  • 3 Nori sheets
Instructions:
  1. Measure the rice and rinse under cold water for 1 minute.
  2. Drain the rice, making sure there isn’t any excess water.
  3. Mix the drained rice into 1 and ¾ cups of cold water in a saucepan.
  4. On medium-high heat, bring the mixture to a simmer. Don’t stir the rice.
  5. When the rice becomes foamy, reduce the heat to low. Continue to let it simmer for 18 minutes with a lid.
  6. After 18 minutes, set the rice aside for another 15 minutes. Keep the lid on during this time.
  7. In a small mixing bowl, combine the rice vinegar, sugar, and salt. Mix until the salt and sugar have dissolved, then set aside.
  8. When the rice is done, grab a wooden spoon and spread the rice on the base of a big dish. Take half of the seasoning and pour it over the rice. Fold it through, then do the same with the remaining seasoning.
  9. Set the rice aside in front of an open window or fan to cool for 30 minutes.
  10. Once the rice is cooled, you can now start rolling! Grab a Nori sheet and a bamboo rolling mat.
  11. Place ⅓ of the rice evenly across the Nori sheet. Press it down with wet hands, ensuring it’s even across the sheet. However, on the farthest side away from you, there should be a 2cm strip left without rice.
  12. Layer the tuna, avocado, and cucumber strips width-wise on the side closest to you.
  13. Then, firmly roll the sushi length-wise using the bamboo mat, starting at the side closest to you. 
  14. At the end of the roll, wet the extra strip and seal off the roll. 
  15. Cut the roll into bite-size pieces.
