I’m a sucker for Starbucks’ blueberry muffins. But let’s be honest: The cost of Starbucks adds up!

These definitely quench my cravings, but if you really want a bit of added sweetness, you can also sprinkle some sugar on top to really match that notorious Starbucks muffin! 

So, here’s how to make these healthy versions.

 

How These Blueberry Oatmeal Muffins Can Improve Your Mood

Starting your day with a delicious and nutritious breakfast can set a positive tone for the hours ahead. So, let’s take a closer look at how some of the ingredients in this muffin recipe can set that tone and benefit your mental health.

Blueberries: Nature’s Little Mood Enhancers

Blueberries are among the highest antioxidant-containing fruits.

Their compounds, particularly flavonoids, help reduce oxidative stress in the body and brain. Lower oxidative stress is associated with better mood and cognitive function.

Blueberry Oatmeal Muffins

Ingredients:
  • 1 cup of milk
  • 1 cup of old-fashioned rolled oats
  • 1 and ¼ cups of all-purpose flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • ½ cup of unsalted butter (melted)
  • ½ cup of honey
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1 cup of fresh or frozen blueberries
Instructions:
  1. Mix the oats and milk together in a bowl. Let them sit for 20 minutes (the oats should “puff up”).
  2. Preheat the oven to 425°F.
  3. Spray a 12-muffin tin with cooking spray or line with muffin liners.
  4. Mix the flour, baking powder, baking soda, cinnamon, and salt together in a large bowl. 
  5. In a medium-sized bowl, whisk together the melted butter, honey, egg, and vanilla extract.
  6. Add the wet ingredients to the dry ingredients. Mix thoroughly, then add the soaked oats and blueberries. Mix until well combined.
  7. Spoon the batter into the muffin tin. It should fill up to the edge of the top of the tin. 
  8. Bake for 5 minutes at 425°F. 
  9. Then, reduce the temperature to 350°F and bake for another 16-17 minutes or until a toothpick comes out clean.
  10. Let the muffins cool for 5-10 minutes, then enjoy! 
  11. These muffins will stay yummy and fresh sealed at room temperature for a few days. If you want to keep them for longer, place them in the fridge to enjoy them for up to a week.
