Bacon Wrapped Chicken & Asparagus

Ingredients:
  • 4 boneless chicken breasts
  • 12 asparagus spears
  • ½ cup of pesto sauce
  • 1 tablespoon of olive oil
  • ½ teaspoon of Italian seasoning
  • ¼ cup of parmesan cheese (grated)
  • 4 slices of bacon
  • Salt and pepper
Instructions:
  1. Preheat your oven to 400℉, and line a baking sheet with foil.
  2. Pound the chicken so that it is about ½ of an inch thick.
  3. Toss the chicken and pesto in a bowl together.
  4. Trim the asparagus so they are about the same length as the chicken, then place the asparagus in a bag with olive oil and Italian seasoning. Shake until the asparagus is fully coated.
  5. Put three pieces of asparagus on the chicken with a bit of parmesan cheese, then roll the chicken around the asparagus and wrap it with bacon.
  6. Place each chicken with the seam down on the baking sheet.
  7. Bake for 35 to 40 minutes or until the juices are clear.
  8. Lastly, broil six inches from the top of the oven for about four minutes.
  9. Serve and enjoy with your favorite side dish.

Some side dish options include salads, mashed potatoes, grilled veggies, or whatever you fancy! My personal favorite is a mix of zucchini, carrots, and potatoes grilled with a bit of seasoning or sauce.
