I was first introduced to Pan de queso in Brazil back in 2019. And I’m not even exaggerating when I say it’s the best cheese bread I’ve ever had.

Pan de queso, also known as Brazilian cheese bread or pão de queijo, originates from the Brazilian state of Minas Gerais.

Its history traces back to the 18th century when a shortage of wheat led to the use of the cassava root (tapioca flour) for making bread. As cheese became more widely available due to cattle farming advancements, it was incorporated into these cassava breads, transforming them into the beloved cheesy and chewy snack known today.

And yes, I get it; cheese bread isn’t exactly the first thing that comes to mind when we think about looking after our mental health. But I’ll always argue that optimal mental wellness comes down to balance — which is right where this deliciously carb-filled snack comes in!

So, how can you make these yummy rolls? And can they enhance your mental health? How?

Okay, so I’ll admit it: These aren’t exactly the most nutritious food on the planet. And that’s okay. Overanalyzing our diets can lead to eating disorders and unhealthy obsessions, as it is. Plus, life is meant to be enjoyed — and you’ll definitely enjoy these tasty bites.

Ingredients:
  • 1 ¼ cup of tapioca flour
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 ¼ cup of crumbled queso fresco
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons of butter
  • 1 egg
  • 1 tablespoon of milk (if needed)
Instructions:
  1. Mix together the tapioca flour, baking soda, salt, queso fresco, mozzarella cheese, and egg in a blender or food processor. Blend or process until a smooth ball is formed.
  2. If a ball isn’t forming after a couple of minutes, add the tablespoon of milk and repeat.
  3. Create tablespoon-sized balls with the dough and place them in the fridge for 30 minutes.
  4. Heat the oven to 500℉. 
  5. Line a baking sheet with parchment paper, and place the chilled balls on the sheet about one to two inches apart.
  6. Bake for about 7-10 minutes or until the balls are golden brown.
  7. Take them out of the oven and enjoy!
