Black Bean Burgers

Ingredients:
  • 3 cups of black beans (drained, rinsed, and cooked)
  • ⅓ cup of yellow onion (grated)
  • 2 garlic cloves (minced)
  • 2 chipotle peppers from can of peppers with adobe sauce (diced)
  • 1 tablespoon of tamari
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of cumin
  • ½ teaspoon of sea salt
  • ½ teaspoon of black pepper
  • 1 egg
  • 1 cup of Panko bread crumbs
  • Extra virgin olive oil
  • Hamburger buns (of your choice)
Instructions:
  1. Add the beans, onion, garlic, chipotles, adobe sauce, tamari, balsamic vinegar, cumin, salt, and pepper into a large bowl. Mash the ingredients using a potato masher until the mixture holds together (there can still be some chunks). 
  2. Add the eggs to the mixture and fold to combine.
  3. Add the Panko bread crumbs to the mixture, folding to combine again.
  4. Using your hands, form six patties with the mixture. If the mixture feels too wet, try chilling it in the fridge for about 20 minutes.
  5. Heat a cast-iron skillet to medium heat. 
  6. Brush each side of each patty with oil and cook the burgers for about five minutes per side. 
  7. Serve with hamburger buns and desired toppings!
