Mexican Pasta Salad

Ingredients:

Pasta Salad:

  • 8 ounces of whole wheat bow-tie pasta
  • 1 can (15 ounces) of black beans (rinsed and drained)
  • 1 can (15 ounces) corn
  • 2 cups of cherry tomatoes (halved)
  • 2 large avocados (diced)
  • 2 whole green onions (sliced)
  • 1 large jalapeno (diced)
  • ⅓ cup of cilantro (chopped)
  • ¼ cup of feta cheese

 

Dressing:

  • ¾ cup of non-fat plain Greek yogurt
  • 2 tablespoons of extra-virgin olive oil
  • Zest of 2 limes
  • 2 tablespoons of freshly squeezed lime juice
  • 1 teaspoon of Tabasco hot sauce
  • ½ teaspoon of salt
  • ½ teaspoon of chili powder
  • ¼ teaspoon of smoked paprika
Instructions:
  1. Cook the pasta as per the instructions on the box or bag.
  2. Once cooked, rinse and drain.
  3. Place the pasta in a large mixing bowl and add the corn, black beans, cherry tomatoes, avocados, green onions, jalapeno, and cilantro.
  4. For the dressing, mix together Greek yogurt, olive oil, lime zest, lime juice, hot sauce, salt, chili powder, and smoked paprika. Taste and add salt if preferred.
  5. Combine the dressing and pasta mix together. Toss to coat the pasta mix thoroughly. 
  6. Sprinkle the feta cheese on top. 
  7. Enjoy immediately, or, if preferred, chill for two hours before serving.
