Chicken Bone Broth

Ingredients:
  • 2 1/2 lbs of chicken bones (roasted)
  • 1 tablespoon of cider vinegar
  • 1 teaspoon of salt
  • 1 medium onion (peeled and halved)
  • 2 sticks of celery (cut into thirds, with leaves attached)
  • 2 medium carrots (peeled and halved)
  • 2 smashed garlic cloves
  • 1 bay leaf
  • 16 cups of filtered water
Instructions:
  1. Place the roasted bones and any juices from the roasting pan into a large 8-quart stockpot.
  2. Pour in 16 cups (4 quarts) of filtered water. Add one tablespoon of apple cider vinegar and one teaspoon of salt.
  3. Set the pot over high heat and bring it to a boil.
  4. Once boiling, immediately lower the heat to a gentle simmer. Skim off any foam or impurities that rise to the surface.
  5. Cover with a lid, leaving a small gap for steam to escape. Let it simmer gently for 6 hours.
  6. After 6 hours, add the onion, celery, carrots, two smashed garlic cloves, and one bay leaf.
  7. Continue simmering for another 9 hours, maintaining a low, steady heat. Avoid a hard boil, which can make the broth cloudy.
  8. If needed, you can pause the cooking overnight. Turn off the heat, let it cool slightly, and then restart simmering the next day.
  9. Now it’s time to strain your broth! Set a fine mesh sieve over a clean pot or large bowl.
  10. Pour the broth through the sieve, pressing lightly on the solids to extract as much liquid as possible.
  11. Discard the remaining bones and vegetables.
  12. Let the broth cool to room temperature.
  13. Cover and refrigerate overnight. The next day, skim off any solidified fat from the surface.
  14. Store the broth in the refrigerator for up to 3-5 days, or freeze in containers (leaving space for expansion) for up to 3 months.
