Ingredients:
  • Water
  • Kosher salt
  • 2 pounds of carrots (peeled and cut into cubes)
  • 1 celery stalk (chopped)
  • 3/4 teaspoon of harissa spice
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 1/2 teaspoon of sweet paprika
  • 1 to 2 garlic cloves (minced)
  • 1 celery stick (finely chopped)
  • 1/2 cup of chopped fresh cilantro (mint or parsley would work as well)
  • 1-2 tablespoons of fresh lemon juice
  • 3 tablespoons of extra virgin olive oil
  • 3 tablespoons of toasted sesame seeds (optional)
Instructions:
  1. Add salted water to a large pot and bring it to a boil.
  2. Add the carrots. Cook for about 20 minutes or until the carrots are tender, then drain.
  3. Place the carrots in a mixing bowl.
  4. While still warm, add all of the remaining ingredients. Top with toasted sesame seeds.
  5. Toss the salad and serve!
