One-Pot-Chicken Broccoli Rice Casserole

Ingredients:
  • 2 tablespoons of unsalted butter
  • 1 tablespoon of olive oil
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 500g (1 lb) chicken thigh (cut into cubes)
  • 2.5 tablespoons of flour (or 1 ½ tablespoons of cornflour/cornstarch)
  • 2 cups of milk
  • 2 cups of chicken broth
  • 1 1/4 cups of white rice
  • 1 teaspoon dried thyme
  • Salt and pepper
  • 1 large head of broccoli (cut into small pieces)
  • 2 cups of shredded mozzarella or cheddar
  • Finely chopped parsley (for garnish)
Instructions:
  1. Add the butter and oil to a pot on high heat. 
  2. Add onion, garlic, then cook for one minute.
  3. Add the chicken and cook until it changes from pink to white.
  4. Turn the heat down to medium, then add the flour and stir for another minute.
  5. Add half of the milk (make sure to keep stirring!), then add the rest of the milk. Mix until combined.
  6. Add the broth, rice, thyme, and salt and pepper.
  7. Let the mixture simmer and cover it. Turn the temperature to medium-low, let it simmer (covered) for 12 minutes.
  8. Take the lid off; you should still have some liquid on the surface. 
  9. Make sure to work quickly here, and add the broccoli. Make sure it’s submerged under the water. Cook for another three minutes (covered) or until the broccoli is cooked.
  10. Turn your oven broiler on. Remove the lid and mix half of the cheese in.
  11. Add the remaining cheese on top, then broil it until melted.
  12. Serve with garnished parsley, and enjoy!
