Ingredients:
  • 8 eggs
  • 1 cup of cottage cheese
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of onion powder
  • ½ cup of shredded cheddar cheese
  • 1 cup of chopped ham, peppers, sausage (or other veggies and meats of your choice)
Instructions:
  1. Preheat your oven to 350℉. Grease a muffin tray so your egg bites will easily slide out once cooked.
  2. Blend together the eggs, cottage cheese, and spices until smooth.
  3. Divide the egg mixture equally into 12 muffin tins.
  4. Top each with cheese and the mix-ins of your choice.
  5. Bake for 18-22 minutes.
