The great thing about this dish from The Roasted Root is that you can prepare it ahead of time. Make a big batch one morning (or just one batch! The entire recipe yields four servings.), then use the leftovers across the following days.
We recommend making the actual sweet potato hash beforehand, but leave any egg that you make to throw on top for the morning (This works perfectly for scrambled and fried eggs, and makes for a quick and easy breakfast!).
The other upside? This is super easy to make. You definitely don’t have to be a whiz in the kitchen. Here’s how to do it.
For extra flavor, use fatty bacon. Alternatively, you can also throw in other spices, such as cumin, cayenne pepper, oregano, or rosemary. This recipe also is flexible in that you can add other veggies like mushrooms or peppers.
