  • 5 fish filets
  • 2 cups of shredded cabbage or coleslaw mix
  • ½ cup of shredded carrot
  • 4 corn tortillas
  • Cilantro (for garnish)
  • Chopped peanuts
  • 4 lime wedges (for garnish)
  • Sriracha (optional)

Dressing:

  • 3 tablespoons of sugar
  • 2 tablespoons of olive oil
  • 2 tablespoons of apple cider vinegar
  • ½ teaspoon of lemon juice
  • Salt and pepper (to taste)

Peanut Sauce:

  • ⅓ cup of chicken broth
  • ½ cup of peanut butter
  • 1 tablespoon of soy sauce
  • ½ teaspoon of lime juice
  • 1 teaspoon of cilantro (chopped)
  • 1 tablespoon of Sriracha
Instructions:
  1. Cook the fish according to the package instructions.
  2. In a bowl, mix the cabbage/coleslaw mix and carrot with the dressing. 
  3. When the fish is cooked, chop it up into bite-sized pieces and distribute it evenly across four tortillas.
  4. Add the slaw on top, then drizzle a bit of the peanut sauce on each. 
  5. Garnish with cilantro, peanuts, and lime, then enjoy!
